Udon Noodles in Broth (or use gluten-free noodles)
Ingredients

package of udon noodles

cups
water
1
strip kombu

shiitake mushrooms, soaked

tablespoon
tamari, or to taste
1
teaspoon
finely grated ginger
3
scallions, thinly sliced
Instructions
Add the noodles, kombu, shitake mushrooms, and tamari to boiling water and cook according to package instructions on the noodles. Turn flame off. Add grated ginger to taste. Sprinkle scallions on top at the end.
