- 1 cup organic brown rice
- 5 cups water
- 1 strip kombu, soaked and diced
- 3-4 scallion roots
- 3-4 scallion tops
- 3-4 shitake mushrooms, soaked, stems removed and sliced
- 2 teaspoons barley miso

Instructions
- Place the rice, kombu, shitake, and scallion roots in a pot and bring to a boil. Reduce flame to low, cover, and continue to cook for 1 ½ hours. Add more water, if necessary. Add miso and simmer for five minutes, but do not boil. Garnish with fresh scallion tops.
